At the time of this writing, I feel pretty wonderful. I’d conservatively say I have reached 80% of where I was before we started the induction treatment in terms of pain, functionality, and fatigue. That is a glowing report considering all that has happened in the last six months. I’ve been much worse. I’m told I am soon to be considerably worse still for about three months during the transplant.
Jackie and I have been preparing in every way we can imagine. One of our preparations involves batch cooking our favorite meals and creating double-serving hot dishes, frozen and vacuum sealed. These beautiful MRHs (Meals Ready to Heat) are some of our tried-and-true favorites.
We have now created about 75 meals that will help make mealtimes extraordinarily convenient. I won’t know if any of this will be appetizing when I’m in the thick of chemo, until it’s not. Nonetheless, there are meals at the ready and we soldier on.
It’s no secret that I love to cook. Variety helps keep food interesting. Jackie and I have come up with 14 different homemade soups, chili, and entrées from which to choose. To keep it fun and easy to recall, I’ve put together a menu of what’s in the freezer. (Of course I did!)
