Spring is teasing us with warmer days. Windows are opened to drink in the the promising breezes of the new season. Time to switch up the goodies in the Care Providers Cookie Boxes to reflect the refreshing weather.
I first made these small-batch Lemon Shortbread many years ago when Jackie was eliminating dairy for a while, but was still in need of her morning breakfast “cookie course.” They are surprisingly good made with Earth Balance vegan butter. They are sublime when made with pure, organic butter from the milk of a cow I can visit down the road.
