Some days the appetite is just not there. That is when I look for nutrition-packed, easy-eating, comfort food. This recipe started out as an “Apple Pie Smoothie” but I found the sugar content of the freeze-dried apples to be more than I wanted. This was the perfect adaptation. I know this could be considered seasonal, but I just consider it pumpkin, a flavor I particularly like.
Pumpkin Pie Smoothie
5 oz pumpkin puree (not pie filling), about 1/3 of 15 oz can
1 ripe frozen banana, in chunks
4 oz plain yogurt (reg, nf, non-dairy)
4 oz milk (reg, 2%, nf, unsweetened almond milk, etc)
3/4 tsp pumpkin pie spice
(or 1/2 tsp cinnamon + 1/8 tsp each nutmeg, ginger & allspice)1 tsp vanilla extract (optional)
